Our 
Story

Our journey began making pastries for our coffee shop La Perlita.

This was inside the old Republica space, in a tiny corner that was supposed to be a temporary working space until we had our own bakery.  


Every morning, the crew would come in early, work their magic, and at about 7:30am, pastries would go out to our growing list of shops @laperlitapdx@esperanzapdx, and @electricapdx . 
By 1pm, the team would wrap up as the República team began to arrive, disappearing from the space as if they never were there in the first place. 

Almost 2 years of this!


Finally, in December of 2022, we opened our humble little corner bakery. 
You can find us here daily, from 8:00am - 2:00pm.

The word "Matutina" is the feminine of the word "early morning", as in the early morning shift. The term "Panaderia Americana" was chosen as a way to describe what we do. This isn't a traditional Panaderia, but it also is not a traditional Bakery. It's really more of a phrase that our crew used around here to describe to their friends and family what Matutina was; "es como una panaderia, pero como panaderia Americana".
It's like a bakery, but like an American Bakery.
