We began making pastries for our coffee shop La Perlita..
This was inside of the old Republica space, in a tiny corner that was suppose to be a temporary working space until we had our own bakery.
Every morning, the crew would come in early, work their magic, and at about 7:30am pastries would go out to our shops @esperanzapdx, @laperlitapdx, and @electricapdx .
By 1pm, the team would start wrapping up as the República team began to arrive. Disappearing from the space as if they never were there in the first place.
Almost 2 years of this!
Finally, in December of 2022, we opened our humble little corner bakery.
You can find us here daily , between 9-2pm.
The word "Matutina" is the feminine of the word "early morning", as in the early morning shift. The term "Panaderia Americana" was chosen as a way to describe what we do. This isn't a traditional Panaderia, but it also is not a traditional Bakery. It's really more of a phrase that our crew used around here to describe it to their friends and family what Matutina was; "es como una panaderia, pero como panaderia Americana".It's like a bakery, but like an American Bakery.
